Soy & Ginger Marinade

A perfect marinade this festive season is our Sticky Honey, Soy & Ginger Marinade. Great for ham, pork or chicken.


1/2 cup Mother Earth Mānuka Honey UMF 5+

1/3 cup dark soy sauce

1 Tbsp finely grated fresh ginger

3 garlic cloves, crushed

1/4 tsp chilli flakes (optional)

Juice of 1 lemon

1 kg chicken drumsticks

2 Tbsp toasted sesame seeds, to garnish


  1. Combine marinade ingredients in a saucepan and bring to the boil, stirring until honey melts. Boil for 1 minute then pour into a sterilised jar and leave to cool completely.
  2. When ready to use in cooking, place chicken in a ceramic dish. Pour over marinade and toss chicken well to combine. Cover and refrigerate for 30 minutes, to marinate. Meanwhile, preheat oven to 190°C.
  3. Place chicken in a single layer in a roasting pan lined with non-stick baking paper. Roast for 45 minutes, or until cooked through.
  4. Sprinkle chicken with sesame seeds and serve with slaw or a green salad on the side.

Tip: This marinade works well with chicken wings or nibbles, and is also great for marinating pork spare ribs.
